I was 12 years old when I tasted my first panna cotta. The dinner plates were gone and the mother served the fine dessert as a surprise. It was velvety, creamy and sprinkled with cereal grains. The panna cotta contains very few ingredients and is basically a simple mixture of cream, sugar and vanilla. Gelatin is added to stabilize the mixture and create a cream like pastry. The essence of any panna cotta is cream. Considering that “panna cotta” means “cooked cream” in Italian, the importance of cream is obvious. With Panacotta liquid, we have remained faithful to the authentic Italian recipe with special attention to the choice of cream. The result was more than equal.
